Chicken Stir Fry

My go to Stir Fry, you can mix it up and use any "Meat" shrimp, tofu, steak, chicken or fish, whatever you're feeling. You can also use WHATEVER veggies you want. The secret to this recipe is in the sauce.


Here you go! No need to bore you with how I was inspired to make this, what was so exciting about it. I was just HUNGRY and this is what I had in my kitchen to cook. Ya feel me?!



Ingredients

  • 2 Chicken Thighs

  • 1 tablespoon + tsp of vegetable oil

  • 1 cup small broccoli florets

  • 1 package of sliced mushrooms if you don't like mushrooms you can add more broccoli or carrots instead

  • 2 Carrots

  • 2 teaspoons minced fresh ginger (or 1 tsp powdered ginger)

  • 1 tablespoon minced garlic

  • 1/4 cup oyster sauce

  • 1/4 cup low sodium chicken broth or water

  • 2 teaspoons toasted sesame oil

  • 1 teaspoon coconut aminos (or soy sauve substitute)

  • 1 teaspoon cornstarch

  • salt and pepper to taste

Directions

  • Heat 1 teaspoon of oil in a cast iron (or frying pan) over medium heat. Add the broccoli, carrots and mushrooms and cook for approximately 4 minutes or until vegetables are tender.

  • Add the ginger and garlic to the pan and cook for 30 seconds more

  • Remove veggies and place them on your cutting board you used to chop them*

  • Wipe the pan clean with a paper towel and turn the heat to high. Add a tablespoon of oil.

  • Season the chicken with salt and pepper and add them to the pan in a single layer. Cook each side until golden brown and cooked through.

  • Add the vegetables back to the pan

  • In a bowl whisk together the oyster sauce, chicken broth, sugar, sesame oil and soy sauce. In a small bowl mix the cornstarch with a tablespoon of cold water.

  • Pour the oyster sauce mixture over the chicken and vegetables; cook for 30 seconds. Add the cornstarch and bring to a boil; cook for 1 more minute or until sauce has just started to thicken.

  • Serve immediately, with rice if desired.

If you can't get your kiddo to eat what you cook for dinner, DONT feed them anything else!


They WILL learn to eat what you cook or they will go to bed hungry. My mom did it to me as a kid and it worked. I went to bed hungry 1 or 2 times my whole life and I'll never do it again.


When people are hungry they WILL eat. So stand your ground! ;) "Kids won't starve themselves" I've heard this from multiple pediatricians.
