Favorite Instant Pot Meals

If y'all are like me, you like quick, easy, budget friendly and healthy meals! So here are a few of my favorites!

A few abbreviations you need to know...

IP = Instant Pot

NPR = Natural Pressure Release

QR = Quick release (meaning turn your release valve and let steam release quickly)

White Bean Parmesan Soup (+Chicken)


What you need

2 32oz vegetable broth

2 cans cannellini beans

14.5 oz diced tomatoes (drained)

Salt & pepper

Italian seasoning

2 chicken breasts (optional)

1 6oz bag of baby spinach

1 onion

1 jalapeño

2 cloves of garlic

How to cook it

1) Turn IP to sautée and sautée diced onions and jalapeño with olive oil and garlic

2) Add broth, drained tomatoes and chicken & Manual cook for 20 minutes

3) Pull chicken out, shred and add back into pot

4) Drain beans and add to the pot with spinach

5) Cook manual for 5 minutes and quick release

This recipe is delicious without the chicken. So you can skip that step and just add all the ingredients and cook for 5-10 minutes. The longer you cook the more flavoe. or you can slow cook it., up to you!

Chicken Zoodle Soup


What you need

1 tsp olive oil

1 bay leaf

2 tbs minced garlic (2 cloves)

2 tbs Apple Cider Vinegar

2 tsp parsley

1/2 tsp thyme

1/4 tsp rosemary

1 small red onion

3 carrots

3 celery ribs

3 small zucchini

5-6 cups chicken broth

1lb chicken breasts

How to cook it

1) Peel, and dice veggies

2) Turn Instant pot (IP) on to "sauté" and Sauté the onions, celery, carrots and olive oil

3) Add chicken breasts, bay leaf seasonings and enough chicken broth to cover your chicken. I like mine soupy so I add more than whats called to just cover the chicken.

4) Turn IP onto "meat/stew" let cook and steam release.

5) Remove chicken and shred, add back into the IP

6) Spiral zucchini into IP and manual pressure cook for 2 minutes. You can quick release this one.

White Chicken Chili


What you need

2 tbs minced garlic (2 cloves)

2 jalapeños - minced

3 tsp cumin

2 tsp oregano

Salt & Pepper to taste

1 small yellow onion minced

2 cans of great northern beans

2 4oz cand of green chilis

5-6 cups chicken broth

1lb chicken breasts

How to cook it

1) Peel, and dice veggies

2) Turn Instant pot (IP) on to "sauté" and Sauté the onions, celery, carrots and olive oil

3) Drain beans and add them, chicken breasts, bay leaf seasonings and enough chicken broth to cover your chicken. I like mine soupy so I add more than whats called to just cover the chicken.

4) Turn IP onto "meat/stew" let cook and steam release.

5) Remove chicken and shred, add back into the IP

6) Spiral zucchini into IP and manual pressure cook for 2 minutes. You can quick release this one.

7) Garnish with avocado and cilantro

One Minute Quinoa & Veggies


What you need

3 Clery stalks

1 red bell pepper

2 medium tomato

1.5 cups of uncooked quinoa

1.5 cup chicken broth

1/2 cup black olives

1/3 cup pesto

1/2 cup crumbled feta

1/4 cup almonds

1/3 cup pesto

1/4 tsp salt

How to cook it

1) Chop celery and bell pepper into small pieces. Rinse and drain quinoa.

2) Dump quinoa into Instant Pot, then bell pepper and celery. Add 1/4 teaspoon of salt. Measure 4 well-packed cups of spinach (about half a bag) and dump into Instant Pot. Pour chicken (or any other) broth into pot.

3) Close the lid and make sure the vent is set to closed. Push the manual button, make sure pressure is on HIGH and reduce time to 1 minute.

4) While the pot comes to pressure and cooks, chop tomatoes and olives.

5) When the pot beeps several times it has finished cooking. Release pressure in o of two ways: 1) manually release pressure by carefully opening steam valve. Ma sure to keep hands clear of steam as it will be hot. This takes a couple of minute Or 2) do nothing and allow the pressure to release naturally over about 15 minutes. You will know you can open the pot when the pin to the side of the pressure valve drops.

6) Add tomatoes, olives, and pesto to the pot. Mix well. 7) Serve warm or cold topped with feta cheese and almond slices.
